Pickled Cucumber

Nepali cucumbers differ slightly from the varieties available in the United States. They are eaten fresh when the cucumbers are young, but are also left on the vine to mature so they can be made into pickles. Mature Nepali cucumbers are large, oblong, and brown-skinned with a crisp flesh, resembling small watermelons. Pickled cucumber is eaten frequently in Nepal. During the festival of Dashain, when a large amount of meat and rich foods are consumed, pickled cucumbers are served to provide
