When I was a child my mother used to make Rengosalata instead of Taramosalata on Clean Monday, the Greek Orthodox first day of Lent. We lived at the time in Patissia, an area then on the outskirts of Athens with very few houses in the midst of large gardens.

Friends and relatives used to come to our house to celebrate this glorious, early spring holiday. Each year we flew our kites in the fields and had a traditional picnic in our garden. My mother’s Rengosalata
