Crunchy and delicious, fried eggplant and zucchini are the most popular appetizers in Greek tavernas. When served with Skordalia (Garlic Sauce), they become the foremost meze for ouzo or resinated wine.

These are especially good when tomato juice is used in the batter because the slight acidity of the tomato complements the sweetness of the vegetables.

Unfortunately, this is a last-minute dish, not suitable for cooks who like to be free when their guests arrive
