Throughout Macedonia, the most common appetizer is fried small light green peppers. Although they are usually prepared the day before serving and then sprinkled with a little vinegar and served cold, they taste better warm, straight from the skillet.
Pour the oil into a skillet to a depth of about ⅓ inch and heat over medium heat. Fry the peppers on both sides until soft, 3 to 4 minutes. Remove with a slotted spoon, transfer to a plate, and sprinkle with vinegar. Season with salt and pepper and serve immediately.
