A typical meze served during Lent, these patties can also be served as an entree. There are many different kinds of taramokeftedes, some using soaked bread as a thickener instead of potato. There are even taramokeftedes made with wild greens (horta).

Ingredients

  • Olive oil, for deep-frying
  • 1 cup finely chopped scallions
  • 1½-2 cups freshly mashed potatoes

Method

In a skillet, heat 2 tablespoons olive oil and sauté the scallions until transparent. Remove with a slotted spoon.

In a bowl, mix the mashed potatoes with the scallions, tarama, dill, and mint. Stir well and set the mixture aside for 1 to 2 hours or overnight.
