Wild asparagus is a rare springtime delicacy that is particularly popular in Crete. This asparagus is a long, thin form called Asparagus acutifolius, different from the wild asparagus found in the New World, Asparagus officinalis, which is the domestic variety gone wild. Greeks eat wild asparagus boiled, stewed with a lot of onions, and in omelets. Because it is somewhat bitter, it tastes delicious in omelets. If you can’t get it, use young, bitter dandelion shoots instead.
