Apicius, the well-known Roman gourmet cook, advises people who want to preserve fried fish to sprinkle it generously with hot vinegar. Like most of the recipes Apicius recorded in his writings, it is probable that this idea originated in ancient Greece.

This method of cooking fish and sometimes snails is called savori in modern Greek, which uses the Italian word. It is one of the rare contemporary Greek recipes that includes rosemary, an herb that has been used since antiquit
