Fried Whitebait—marides or atherina (as the smaller fish are called in Greek)—is a much-loved delicacy, enjoyed whenever one can find these tiny fish in the fishmarket. They are usually placed in the middle of the table, often served as an appetizer before the main fish course in island or seashore tavernas. The small fish are picked up and eaten with the fingers—bones and all. But they can also be served as a main course, accompanied with Steame
