As I mentioned in the introduction to this chapter, Fassolada was considered the Greek national dish some years ago and many jokes were made about it. But now it’s getting more and more difficult to find good-quality beans to produce the thick soup I remember from my childhood. It seems as though people got fed up with it and no longer cook it, and so no effort is being made to grow good beans.
