My original thought was to leave out what is probably the most famous Greek dish. Although many people think it is a Greek classic, moussaka was, in fact, probably the invention of some educated Turkish chef inspired to use béchamel—a well-known French sauce—as the topping for an eggplant and meat casserole.

In restaurants all over Greece one finds versions of moussaka that are usually too oily, with so much béchamel that it forms a top layer almost as thick as the vegetables and me
