This very interesting dark bread is seldom found fresh. You are most likely to taste it in a house in Chania or Rethymnon in Crete, in the form of dried rusks served with coffee or the sweet farmer’s cheese, anthotyro. They also make a lovely dessert when dipped in sweet wine.

I was told that this dough was used to make pentothelitiko, the five-point starshaped bread that is believed to have the power to heal all illnesses.
