The Greeks have numerous walnut and almond cakes, but we rarely serve them the way English and Americans serve theirs. Ours are real sweets, eaten with a spoon, because syrup is poured over them.

As with many of Greek dishes, there are two different varieties of walnut cake: one for Lent without eggs and butter, and a festive one with plenty of eggs. This recipe was given to me by Vali Manouilidi.
