Over the last few years, diamond fish has become Chile’s favourite fresh fish. It is caught in the Valparaíso area, where the local port provides the majority of the fish for market. The fish is delicious, with very firm flesh that is ideal for baking. The more internationally available tilapia is a good substitute.


  • 60 ml/4 tbsp olive oil
  • 1 courgette (zucchini), cut into thin strips


  1. Preheat the oven to 180°C/350°F/Gas 4. Heat 30 ml/2 tbsp of the oli
