Tomatoes in Chile are large and plump and, like so much of the amazing fresh fruit and vegetables grown throughout the country, are always full of delicious flavour. Adding almonds to the tomatoes and chicken makes this warm, hearty, winter dish go a little further, served with rice and a green salad.

Method

  1. Mix the flour with 5 ml/1 tsp each of salt and black pepper in a shallow dish. Dust the chicken pieces in the flour and set aside.
