Simple and quick to make, this one-pot meal is a classic Chilean dish. Most families eat pollo arvejado at least twice a month, and it is especially popular with children.
Heat the oil in a large pan. Add the onion and sauté over a medium heat for 8 minutes, then add the garlic and continue to sauté for a further 2 minutes, until the onion is browned. Add the carrot, celery, pepper, oregano, thyme, salt and pepper. Sweat the mixture for about 5 minutes, until tender. Remove from the pan.
