This delectable dessert originates from the cuisine of the Diaguita Andean people who inhabited the north of Chile. The pastry is made from ground quinoa flour, and so combines two ingredients that are typical of the region: papaya and quinoa.

  1. First, make the pastry. Sift the flour into a bowl and mix with the butter, then add the sugar. Knead briefly until a homogenous dough forms, then shape into a ball, wrap in clear film (plastic wrap) and refrigerate for 30 minutes.
