Pastry twists are a favourite Chilean teatime snack. Calzones rotos literally means ‘torn trousers’, a name which comes from the shape, formed by passing one end of a strip of dough through a slit in the other, forming a loop.

Ingredients

  • 600 g/1 lb 6 oz/5⅓ cups plain (all-purpose) flour

Method

  1. Sift the flour, baking powder and sugar in a pile on a work surface. Make a well in the centre and add the butter, egg, egg yolks, lemon rind and brandy. Mix together with your hands, gradually adding 200 ml/7
