This delicious, refreshing non-alcoholic drink is found in many parts of the country. It is prepared and enjoyed by people of all ages, from the start of spring and through the summer, and is sold on the streets, in every square and on every beach.

Ingredients

  • 250 g/9 oz/generous 1 cup dried peaches, soaked in

Method

  1. Place the peaches and soaking liquid in a pan. Add the soft dark brown sugar, bring to the boil and cook for 45 minutes. Add the white sugar and cinnamon, then continue cooking for 30 minutes or until the peaches are tender.
  2. Remove the pan from the heat and leave the peaches to cool in the liquid.
