The Chilean papaya is the symbol of the city La Serena, where this drink was created in the 1990s. Papaya is not only delicious, it also contains a high amount of vitamin C. Combined with another local favourite, pisco, it makes a refreshing cocktail.

Ingredients

  • ice cubes
  • 100 ml/ fl oz/scant ½ cup pisco

Method

  1. Put a few ice cubes, the pisco, papaya juice and sugar in a shaker. Shake vigorously for 30–45 seconds, until the mixture resembles a frappé. Strain into glasses and serve.
