Method

Slice 1 red onion very finely into rings, and then toss it with salt and pepper, 2 tbsp lemon juice and ½ tsp dried chilli flakes. Halve, de-seed and chop up 1 tomato and toss this in too, along with a handful of roughly chopped leaves and stems of fresh coriander. Leave for a good half hour or more before serving.
