Chilli salt and lime grilled corn-on-the-cob

Ingredients

  • 100 g butter, at room temperature
  • 2 tsp crushed dried chilli or chilli flakes
  • salt<

Method

Mash the butter with the chilli, salt, pepper and cumin. Cook the cobs in boiling water for about 5 minutes then, when ready to grill, rub them with a little of the butter and grill over hot coals until they’ve taken on a bit of colour. Rub all over with the remaining butter and eat with squirts of lime.
