Firm under-ripe red tomatoes could be used instead of green.
Mix the garlic with the sugar, lime juice, zest and fish sauce until the sugar has dissolved, then toss through the tomatoes, shallots, chillies and shredded lime leaves or chopped coriander. Leave to sit for 20 minutes or so, then serve, splashed with a little peanut oil and drenched with peanuts.
