Firm under-ripe red tomatoes could be used instead of green.


  • 1 clove garlic, crushed
  • 1 tbsp caster sugar
  • tbsp lime juice, plus ½ tsp finely grated zest
  • 1 tbsp fish sauce
  • 4 green tomatoes, cut into wedges
  • 4 pink shallots or 1 small red onion, finely sliced
  • 4 tiny red or green chillies, sliced
  • 3 kaffir lime leaves, very finely shredded, or a handful of chopped fresh coriander
  • peanut (groundnut) oil
  • 3 tbsp toasted crushed peanuts


Mix the garlic with the sugar, lime juice, zest and fish sauce until the sugar has dissolved, then toss through the tomatoes, shallots, chillies and shredded lime leaves or chopped coriander. Leave to sit for 20 minutes or so, then serve, splashed with a little peanut oil and drenched with peanuts.
