Simplicity. Well, beach-side stuff has to be. Some wizened kindly creature on an Ambon beach gave me this, pre-snorkel.


  • selection of prepared fruits, such as strips of green (unripe) mango, starfruit, cucumber and anything crunchy
  • 1 raw sweet potato, peeled and cut into fine matchsticks


  • 1 clove garlic, sliced
  • ½ tsp salt
  • 2 small red chillies, finely chopped
  • 2 tbsp palm sugar or soft brown sugar
  • 100 g toasted crushed peanuts
  • 3 tsp kecap manis or dark soy sauce
  • juice of 2 small lemons or limes


Pound the garlic with the salt to a purée, add the chillies and crush further. Pound in the sugar and then the crushed toasted peanuts, kecap manis or soy sauce, and lemon or lime juice. Serve with the prepared sour fruits and sweet potato sticks.
