This is a wonderfully sweet and filling salad, with, the silky avocado and griddled sweet potato slices bathed in a dubbed-up dressing.


  • 2 red peppers, deseeded and quartered
  • tbsp olive oil, plus extra for the sweet potatoes
  • salt and


  1. Preheat the oven to 190°C/375°F/gas mark 5. Put the peppers in a roasting tin, drizzle with the oil, season and roast for about 30 minutes</
