This is a show-stopper of a burger, both in looks and taste. The ‘sunshine’ comes from the hot Jamaican flavourings and the melted cheese. Adapt the jerk seasoning as you like, according to your tastes, making it as hot as you can handle.

  1. Put the mince in a bowl and use your hands to mix it together well with the chopped coriander leaves and spring onions.
