Ingredients: 250 ml (9 fl oz) milk; generous grating of fresh nutmeg; 60 g (2¼ oz) soft dark brown sugar; 250 ml (9 fl oz) (double) cream; 1 tsp vanilla extract; 150 ml (5 fl oz) stout; 2 tbsp. dark rum; 6 egg yolks; ½ cinnamon stick; 4 cloves

Think this doesn’t sound good? It’s fabulocious! Based on one of my favourite Caribbean drinks, Caribbean stout punch, this is sweet and bitter, and brilliant with chocolate sauce or chocolate brownies. Serve it with a spoonful or two of rum poured over.

Method

Put the milk, cream, cinnamon and cloves in a saucepan and bring slowly to the boil. Take the pan off the heat, stir in the nutmeg and vanilla extract and leave to cool for 20 minutes. Remove and discard the cinnamon and cloves.
