Fish soup

Fish in Greece is glorious. If you are standing on the quayside when a fishing boat returns to an island harbour in the morning, you may be astounded at the number and variety of types caught, and marvel at their glistening colours and shapes. In Greece, fish soup, psarosoupa, makes a complete meal. The liquid soup is served first, followed by a platter of the fish and vegetables from the pot.
