Artichokes are among the first spring vegetables and appear in Greece in the middle of March, together with fresh broad beans and aromatic bunches of dill. They are prepared in various combinations with many spring vegetables. Here, cooked with the new season’s potatoes, they make one of the finest vegetable dishes in the world: anginares a la polita.
