Potato & feta salad

A potato salad may sound mundane but this one, patates salata me feta, is not, as it is redolent with the aromas of the fresh herbs and has layer upon layer of flavours. It is an easy dish to assemble, so it makes a perfect lunch or dinner for a busy day. Serve it on its own, or as a second course after a bean or lentil soup. Potatoes in Greece are very sweet and tasty. Look for a flavoursome salad variety like Charlotte; it will make all the difference to the dish.
