Garithes kritharoto is a lovely spring dish brimming with the freshness of sweet carrots, celery and scarlet tomatoes. Being meat-free, it’s suitable for Lent and is often cooked during Holy Week. It is very important that the pasta is still a little al dente at the end of the cooking time, and that there is a lot of liquid sauce – almost soupy. Some of the liquid will be absorbed while it is in the serving dish.
