Salt cod has been a staple in Greece for generations. It is particularly popular in the spring, and the following dish is often on the menu at city restaurants on Fridays during Lent. The dried, creamy-coloured sides of cod, sparkling with salt flakes, can be seen in the central market in Athens and on the stalls in many street markets. Although it is an acquired taste, salt cod does have an exotic aura about it and, if you get a plump piece of good-quality fish, it can be very appetizing.
