Fasolakia is one of the standard summer dishes in Greece and is made with different kinds of fresh beans according to what is available. When the beans are tender and the tomatoes sweet, the dish, although frugal, can have an astoundingly good flavour. It is usually accompanied by feta and bread.
If the green beans are very long, cut them in half. Drop them into a bowl of cold water so that they are completely submerged. Leave them to absorb the water for a few minutes.
Heat the oil in a large pan, add the onion and sauté for about 10 minutes, until transluce
