All kinds of fish are prepared in this way on the tiny island of Spetses, which is one of the Saronic islands. Serve psari a la spetsiota with lemon for squeezing over and a large fresh salad, or with little boiled potatoes and garlicky green beans, for a complete summer meal.

Ingredients

  • 4 cod or hake steaks

  • 2–3 sprigs of fresh flat leaf parsley

Method

Mix all the sauce ingredients in a bowl, then add some salt and pepper. Set the mixture aside.

Preheat the oven to 190°C/375°F/Gas 5. Rinse the fish steaks
