All kinds of fish are prepared in this way on the tiny island of Spetses, which is one of the Saronic islands. Serve psari a la spetsiota with lemon for squeezing over and a large fresh salad, or with little boiled potatoes and garlicky green beans, for a complete summer meal.
Mix all the sauce ingredients in a bowl, then add some salt and pepper. Set the mixture aside.
