Kotopoulo fournou me patates is a lovely, easy one-pan dish for a family meal. As with other Greek roasts, everything is baked together so that the potatoes absorb all the different flavours, especially that of the lemon and the juices from the chicken.

Ingredients

  • 1 chicken, about 1.6 kg/ lb
  • 2 garlic cloves, peeled

Method

Preheat the oven to 200°C/400°F/Gas 6. Place the chicken, breast-side down, in a large roasting pan, then tuck the garlic cloves and the fresh thyme or oregano sprigs inside and around the bird.
