Spinach and rice make a very successful combination. Spanakorizo is a delicious, yet frugal, dish that can be made in very little time. In Greece, it is particularly popular during periods of fasting, when meat is avoided for religious reasons. Serve it as a main course with some fried fish or chickpea rissoles.

Ingredients

  • 675 g/ lb fresh spinach, trimmed of any hard stalks
  • 105 ml/7

Method

Thoroughly wash the spinach in cold water and drain. Repeat four or five times until the spinach is completely clean and free of grit, then drain it in a colander. If the spinach is large-leafed – as it occasionally is in Greece – chop it coarsely.
