This chicken is an ode to my grilling experiences living in the South. Pro tip: Wrap your brick in aluminum foil and preheat it before cooking. Spatchcocking the chicken (see sidebar) helps the chicken cook faster. The brick also speeds the process, and when preheated, acts as a cooking surface as well. The lemon-chili sauce resembles a peri peri sauce in flavor.
