The idea for The Wolf Smashburger started, not at home, but in Ireland. At a live cooking event, a fellow chef wanted me to build my own burger. He was cooking all kinds of dishes that day, including a smoked picanha. I love picanha, so I built this burger as an ode to everything I love about South American food—with a little American fusion. Don’t have picanha? Use rib eye, sirloin, or tri-tip.
