If you have never cooked oysters on the grill, you are missing something special. Sure, it may not be for oyster purists. And, although grilled oysters are delicious, they are really for packing full of butter and seasoning. But, I say, if you want to leave a few oysters raw, go for it! Most of this recipe can be made hours ahead: Mix that delicious butter, scoop it onto the oyster meat, place in the fridge to firm, and cook it right on the coals when you’re ready. It is as simple as that.
