The seasoning on these outstanding chops is an ode to one of my favorites: harissa. Hailing from North Africa, harissa is a complex mixture of spices and citrus. It is made for all kinds of cooking and is one of the most versatile seasonings I have found. It stands up to strong flavors, which is why I recommend it here, where you have both lamb and a lot of character from the coals.
