If you’re like me, you were excited about this recipe from the word “bacon.” But wait, it also includes maple and bourbon? Come on! But there are some downsides. For one, this recipe title is a mouthful and cooking it requires precision. If you don’t cook this totally indirect—if it catches even a small amount of direct heat—you risk burning the bacon and the chicken turning out overcooked on the outside and undercooked inside. But when cooked over the ideal indirect fire, it can’t be beat.
