Sometimes you just want something fresh...but that doesn’t mean you can’t char it over the fire. In this recipe, charred tomatoes are paired with fresh arugula, toasted almonds, red onion, mozzarella, and a hit of balsamic. It’s a classic flavor combination for a reason, but I think you’ll find the character of the tomatoes takes the dish to another level. Use pine nuts instead of almonds, if you want, and feel free to drizzle some olive oil on top to make it more savory.
