One of the few things I have found hard to do when cooking with live fire is broiling, similar to how you would broil in an oven. To broil is to cook from the top down at high heat to sear off, cook, or caramelize a crust. I thought it was all but impossible until I discovered the cowboy broil. I do not remember who showed me this technique, but the idea is to cover your skillet with aluminum foil, then place charcoal on top to replicate the top-down broil.
