The dough, or masa, used for empanadas is traditionally prepared by soaking dry corn overnight, then cooking, cooling and grinding it. Sometimes it is soaked again for a day after cooking. This recipe uses pre-cooked yellow cornmeal, which makes life much easier.

Ingredients

For the sauce

  • 10 ml/2 tsp oil
  • 3 spring onions (scallions), finely chopped

Method

  1. Place all the sauce ingredients in a medium sauté pan and cook, covered, over medium-low heat for 20-25 minutes. Set aside.
