Butifarras are enjoyed at carnival time, when they are eaten on the streets, served with cornbread rolls called bolos. With the right equipment, either a piping bag, or a sausage-making machine, and casings, you can also make them at home.

Ingredients

  • 450 g/1 lb beef skirt (flank)
  • 115 g/¼

Method

  1. Dice the meats, place into a food processor with the garlic and spices and 7.5ml/1½ tsp salt and add the water if piping. Process until smooth. If using a sausage-making machine, pipe the mixture, knotting it every 2.5cm/1in.
