Hearty chicken soup

This substantial soup is often made in very large quantities as it’s popular at family gatherings on farms in the countryside, where free range hens will have been running around - in fact, they are sometimes cooked with unlaid eggs still inside them. On occasions like this, the dish is usually cooked outside over a wood fire. Flavoured with achiote and pungent culantro leaves, its distinctive smoky smell infuses the house with a distinctive and irresistible Colombian aroma.
