Every household in Colombia eats these at least once a week! As well as making them with totally green plantains, I also make them with plantains that have a hint of yellow in their skin so they are a little sweet; these need to be cooked for a shorter time and at a lower temperature. Patacones also work wonderfully as appetizers.

Ingredients

  • 2 green plantains
  • 750 ml/ pints/3 cups

  1. Cut the ends off the plantains and make a slit down the side with the tip of a sharp knife, then peel off the hard skin with your hand. Cut the plantains into 4cm/1½ in chunks.
