Sweets like these are usually eaten only on the streets. They are made and sold by women of African descent, who carry large platters on their heads as they walk through the streets and along the beaches offering their wares. They have been kind enough to teach me how to make some of their marvellous concoctions.

  1. Make sure you buy tamarind pulp that is a solid paste, with almost no water, and definitely no sugar added. Break the pulp apart into smaller sections with your hands and drop it into the bowl of an electric mixer.
