Here’s another sweet that is sold in the streets and along the beaches by African-Colombian women. One of these culinary artists invited me into her home to learn how to make this and all their other palangana or platter sweets. When these appear during festivals, both Colombians and tourists go crazy for them.

Ingredients

  • 1 large or 2 small fresh coconuts
  • 300 g/11 oz/

Method

  1. Break the coconuts open and remove the white flesh from the shell. Grate the flesh using the largest holes on the grater. (You need in total of about 350ml/12fl oz/1½ cups grated coconut.) Line a baking tray with baking parchment or a silicon sheet.
