Colombians love to eat these figs with some thick arequipe, or dulce de leche, spooned into each quarter, and they can be bought in jars, ready poached and stuffed. An alternative way to serve this delicious dessert is accompanied by cuajada, or fresh white soft cheese, as a contrast to the sweet fruit.

  • 450 g/1 lb fresh figs

Method

  1. Scrape the figs, if necessary, and remove any blemishes with the tip of a knife. Cut into quarters. Place the figs in a heavy pan and cover with 1 litre/1¾ pints/4 cups water.
