The soursop fruit can grow very large - up to 45cm/18in long - and many uses have been found for it in Colombian and Venezuelan cuisine. The juice of the fruit is drunk mixed with water or milk, and the delicious white pulp, which contains numerous black seeds, is turned into desserts such as ice creams, sorbets topped with meringues, and this creamy mousse.
